Who makes the sausage?
We both make all of the sausages that we sell using our own recipes. It's a team effort between the two of us, although Nick has much more experience than Rachel.
Who comes up with your seasonal sausages?
Rachel comes up with most of the ideas, even the sausages with whiskey in them. We create and taste test the recipes together.
Do you raise the pigs? And are they pastured?
No, we do not raise the pigs. We are sausage makers and not farmers. Maybe someday we will be both! We use all natural pork from pigs that are humanely raised. Most of our pork is not pastured. If we do get pastured meat from a local source, it most likely will not be on our website due to limited availability. Feel free to contact us and and see what we have!
Do your sausages have nitrates? What about gluten?
Our sausages do not have nitrates or other preservatives besides salt (and not much salt is added). We do not add gluten to any of our sausages, either. However, our product is made in a kitchen where gluten is present.

We currently ship in the state of Texas.
